Recipe of the Month - Tex Mex Quinoa Bake

1c quinoa
1/2tsp cumin
1/2tsp coriander
1 small sweet yellow or red onion
1 red pepper
1c frozen corn
15oz can of black beans, drained and rinsed
1lb ground beef/bison/elk...your meat of choice (Optional)
1pkg taco seasoning
1c shredded cheddar
1 avocado, chopped for garnish
Cilantro, chopped for garnish

Preheat oven to 350 and mist 9x13 baking dish with olive oil spray.
Boil 2c water.
Stir in quinoa and dash of salt.
Cover, reduce heat to low and cook 15 minutes.
Remove from heat and rest covered for 5 min.
Transfer to bowl and add cumin and coriander.
Meanwhile brown meat, add taco seasoning, and prepare as directed on package.
When done transfer to the bowl with the quinoa.
In a separate skillet, heat a little olive oil and then sauté onion and pepper with a little salt and pepper until browned.
Add corn and cook until heated through.
Add beans and cook until heated through. 
Add mixture to quinoa/meat bowl and stir gently to combine.
Transfer to baking dish and top with cheese.
Bake 10-15 minutes.
Serve with cilantro and avocado. Enjoy!
